Two handles are metal with scored grip surface. The third handle is plastic/rubber. None have swivel heads. Each handle allows you to use a variety of blades that come with the set. The blades fit in to a handle slot and secured by a screw on collar that is also serves as a grip surface for your fingers. Overall, it is a nice compact set of handles and blades.

Q: How well does it work on cutting popsicle sticks?

It’s extremely sharp! As long as you don’t try to chop right through and take a few shallow passes it works great.

Q: Can they cut thin wood like the back of the entertainment center?

It can cut very thin wood Venere, but that’s about it. These are for hobbies not for utility. I would say the back of an entertainment center would be a bit thick for these knives.
