Q: What is the difference between trudeau structure pans and trudeau structure pro pans? both say the have metal inside. worth the added cost for pro?

The difference between the "Pro" Series and the other is the thicker silicone rim completely around the top of the pan allowing slightly more handling surface. Additionally the base on the bottom of the Pro pans are raised to allow more airflow under and around the pan when removed from the oven. Both are high grade food safe silicone and both have the Trudeau patented signature "Structure" encapsulated rims. Enjoy baking with these!

Q: can you put this in the wok to steam, I want to make turnip cake

This pan is heat resistant to 428 degrees. If you can monitor the steam temperature to fit these parameters then yes, go for it!

These are multi colored bits of food grade silicone mixed into the white silicone, all BPA free and food safe.

Not only does this have a structure edge to it at the top, holding it from buckling out to the sides, this also has firm silicone at the bottom, nice and thick, keeping it from ballooning out as well. Plus, from what I can tell with the pinch test, it's 100% silicone no fillers. This is hands down the absolute best bread pan I have owned and I have owned quite a few! Worth every penny!
