Gotta use up the mix
I bought these when there was a deal. I didn't realize how many recipes there are that involve cornbread! If you're looking to try different recipes and need the excuse of "well I need to use up all this mix" then this is the purchase for you!

I forgot to put the margarine in and they still turned out fine
Cornbread muffins are reasonably healthy and unprocessed and make good snacks for people of all ages. I have been eating them for 71 years. They are so easy to make that you can follow the directions, put the margarine in the microwave to liquify it, and then forget the margarine entirely, and the muffins are still very good. Forget cupcakes, they don't hold a candle to muffins. There are no "cupcake remnants."

A trick to adding moistness
The corn muffin mix is fairly decent, especially if you’re in a hurry.But, it is definitely dry.An easy fix is to use creamed corn instead of milk.For a fluffier cornbread, make 2 packages at a time, and add one of those small 8.5 ounce cans of creamed corn. Del Monte sells these smaller cans, but your grocer may have other brands, as well.If you only have regular sized cans (15.5 ounces), then just measure out 8.5 ounces. Focus on getting more ‘cream,’ than kernels of corn. Serve the leftover creamed corn as a side dish, or save it in the refrigerator (maximum 3 days) to use in another batch of cornbread.You will only need to add a few extra minutes of baking time for the double-batch. Do NOT double the cooking time just because you’re using 2 packages of mix. Start with just 5 extra minutes, and then add a bit more if your knife or toothpick doesn’t come out clean. Each oven is different (I use a toaster oven) so you’ll have to be the judge. I bake the cornbread in an 8x8 pan, so again, the baking time may vary if you use a different size, or if you’re making corn muffins.The creamed corn adds a touch of sweetness to the cornbread, but you can always add a teaspoon of sugar to the mix if you like it extra sweet.
