Well Made Santoku
I think we can all agree that this is a well-make kitchen knife. It feels good in the hand and cuts as competently as pretty much any knife out there. It also comes in a utilitarian cardboard box--but one that's nice enough for gifting purposes.The question really, in my mind, is whether or not this is a good value. I mean, if you just want something to use in the kitchen on a daily basis, this will certainly meet your needs. And looking at the higher end of the market (Wusthof), this is 1/2 to 1/3 of the price. So in that sense, you could make the argument that this is a very good value--being a top brand name and an overall great knife. On the flip side, you can buy plenty of other competent Chinese-made kitchen knives right here on Amazon for $10-$25 from names like Cuisinart, Henckels, etc....or they might not be designed or made by a brand that you are already familiar with, but they will perform adequately. I picked up a Ninja santoku last year that I absolutely love, and it's priced just under $50. But I always find that All-Clad pots and pans are priced a bit higher than what might be considered "maximum value". So I would say this knife falls into that category.That said, there is no way I can rate this knife anything under 5 stars. It's just a great knife, and I'm sure it will get plenty of use in my kitchen.

My new everyday knife
I have a set of Henckels knives that are almost 20 years old, but have served me well. I did not have a santoku knife, and now see that I should have been using one for my everyday chopping. Chopping is going much quicker now that everything isn’t sticking to the side of my knife. This All-clad knife starts out sharp, but it will take me awhile to see how the edge holds up. It is comfortable to hold and has a more contemporary shape than my Henckels handles. I’m very happy with it.

Nice & Sharp
I have a single chef's knife that I've been using for the past 10+ years and it has worked well. But I've noticed that I have to sharpen it more frequently than I used to years ago. I figured it would be nice to have another knife to use that's a bit newer. I've never owned a Santoku knife before and was curious to see how it might differ.The knife arrived in a nice high-quality sliding box that makes it suitable for gifting. It also arrived with a sleeve on the blade and a plastic safety piece on the tip to help ensure the blade can safely be removed from the box. The handle has a bit of weight to it which makes the knife feel more balanced compared to the generic chef's knife I've been using.Fast forward a week or so and I'm really enjoying using this knife so far. It's feels very comfortable in the hand when used and is very sharp. So far I've used this knife to dice and/or mince onions, peppers, garlic, carrots, & potatoes and it has had no problem making easy work of all of it.The only thing that I did notice was a bit odd and unexpected is that some veggies would stick to the blade (onions and potatoes in particular). The grooves on the side of the blade are meant to help prevent this from happening, but it has happened frequently so far. Not a deal breaker for me, but it's definitely worth mentioning as I know this can be frustrating.Overall, I'm happy with this blade and would recommend it.

A solid knife
You can never have too many knives and this is a decent addition to the kitchen. It feels a tad too light in my hand and the balance is good but not great. Blade is sharp and cuts well and overall the knife seems well made. I have no doubt this knife will last a long time. A

Very good knife, but not quite perfect
First of all, this really is an excellent knife. It's very sharp, and clearly very well-made. I was fully expecting it to become an instant favorite and to rank at least as high as my current (cheaper, less-well-known/unknown brands) knives, but... it did not. It definitely does the job and I'm sure I'll be using it forever, but I just don't *enjoy* using it. The handle doesn't mold comfortably to my hand, and the knife doesn't feel very well-balanced when I'm holding it. Food seems to stick to the blade during cutting, so I'm forever having to stop and pull pieces of onion (or whatever) off of the blade and set them aside.That said, I like it, it's a great knife. It's just... not perfect.

Crazy sharp!
This All-Clad Santoku Knife slices, dices and chops through everything I've thrown at it with expert precision. It's crazy sharp and heavier than I'm use to, but I'm taking my time and slowly getting use to it. I will say that I was impressed enough with its performance that I upgraded my remaining 15yo knives to All-Clad (Chef, Serrated and Pairing). The one thing that I would change, or add to their line is a shorter bladed Santoku and Chef's knife because I am more comfortable with a 5-6" blade.

Ok knife
It’s not as sharp as my other Japanese knives which cut fish very cleanly.

Solid with good weight and balance.
I like having a handful of quality knives on hand for cooking and food prep. This knife is very solid in the hand with good weight and a nice balance.As soon as I lifted the box this shipped in, I knew it was going to be a quality product... the weight alone told me all I needed to know. It is a solid knife that handles very well in my medium sized hands. It also balances perfectly which goes a long way to help with food prep. The full tang is thick and the steel is solid.The edge was sharp upon arrival but I still ran it across my sharpener a few times just to knock off any burrs. It cuts very well and I am convinced it will hold up to extended use and resharpening over time.If you need a quality knife, this is a good one. Definitely recommend it for daily use.
