Q: when pressing tomatoes, are the skins left behind in the mill?

Yes both the skin and seeds are left . one of the best mills for making tomato sauce.

Q: Is it dishwasher safe?

I've only used mine once so far for making crab apple jelly and hand-washed it afterwards. It's stainless steel so I don't see why it can't go in the dishwasher but personally I'd wash the main part by hand and only put the blades in the dishwasher. It's a really excellent piece of kit though and will be getting a lot more use this autumn with all of the fruit I have in the garden!

Q: What size are the holes on the grinding discs?

There are 3 different sizes of hole. Smallest being for puree so very small, medium about 3 Bb2 and large about 5 mm
