The trays can be taken out so you can put large cake in it.

Would this be ok to store hot chocolate bombs?

Not unless stored somewhere cold. Plastic would cause bombs to sweat. I make my bombs fresh, package and sell same day.

Can you buy replacement lids?

I really dont know perhaps the seller can advise you

How big is the height between layers? I want to use tulip cases which need nearly 10cm to not be crushed

I use tulip cases for my muffins this container is perfect, but you have to take out the inserts as it wont fit.
