Apparently, I've owned this knife for about 5 years. I'll tell you now, it is the most reached for tool in my kitchen. It keeps a fantastically sharp edge for a good long time, looks beautiful, and feels like it belongs in my hand. NOTES: - this is a knife made specifically for right handers - sorry, lefties! (I think they might have a left handed?) - this knife is made of exceptionally hard steel - it will crack or chip if you use it incorrectly. - this is an incredibly sharp knife right out of the box - visit Shun's website and you will see they offer FREE lifetime sharpening service - you just cover shipping/processing. Oh, and to anyone who has a chipped knife, they can fix it for free, you just lose a bit more material in reshaping it. Pretty cool. I can't say I truly knew exactly what I was buying 5 years ago - I was just replacing my trusty Victorinox chef's knife with something I just assumed was better. What I've learned over the last 5 years has made me a true believer in the quality of craftsmanship behind this beautiful knife. During the pandemic, I spent a whole lot of time in the kitchen preparing food for the family. I learned so many different cooking techniques and knife skills I never dreamt I'd have the time to acquire. I found that I truly LOVE cooking and don't mind spending hours preparing amazing meals at all. I find it relaxing and meditative. Having sharp knives is a big part of that. Anyway, just got lost thinking of all the awesome stuff I've made since I first learned how to scramble eggs as a kid. Just, wow. As for those reviews giving this knife one star? Well, dunno about the guy who chipped his knife "cutting a tomato", but that was hilarious. I have cut thousands of tomatoes, tons of other vegetables, meats of all sorts, and probably a million garlic cloves and onions... never had a chip and what a joy it has been! I sharpen my own knives and this thing has always taken the longest between rounds out of all the others. For anyone whose Shun is rusting - wash and dry your knife immediately when you are done using it, especially if you're cutting acidic foods! My favorite knife is now 5 years old and hasn't got a spot of rust on it, has never chipped, and never bent. I'm sure every once in a great while something will slip past QA, in which case, you ought to exchange it for a proper unit - you probably won't be disappointed. If you treat this knife with care and maintain it properly, it should last you a very long time.

Maravilloso cuchillo con un excelente filo desde que lo sacas de la caja, no lo prestes a alguien inexperto o podría ocurrir un accidente, de inmediato se siente la calidad tanto en el metal como en el filo y en el mango, me encantó comprare más productos de shun en el futuro

One word: SHARPPPPP If you don't want to read all my review: This is a decent knife. The best one I used so far. Be aware, you will need to learn how to sharp with waterstone if you want to keep the factory sharpeness. I was looking for a complete set of 14 knives or so with the wood block. Most high quality brands were on sold during Black Friday and Christmas, so I decided to go with that. But fortunately, I realized before spending all that money do I really need all these knives ? So I decided to do a google search and I ended up with a lot of people saying how useless it was to buy the pre made set. First, because you will not use all of them and second, because if you look at the specs, only the chef knife, the utility knife and maybe the santoku knife is made of high quality steal. So you end up paying a lot of money for a few medium range knife and a lot of low range knife. And to add to that, for most of us, home chef, you will find that you will use either a chef knife or a santoku…not both. You either learn the rocking motion or the sliding motion…So no need to pay for both knives (like you do when you buy a set) So I decided to go for the individual knife to fit all my need. First one on the list: Chef knife 8 inches or more. After a lot of research, I was not decided between the Japanese or German knife. I was impressed how the Japanese could cut with ease, but was worried about the hard process of sharpening the knife. When you do some research, you will find there is only one real way to sharp these high quality knives and this is Waterstone sharpening. Fortunately, you can find hundreds of thousands of videos on YouTube on how to do it. You also can find a decent stone for 50 or so here on amazon. So I decided to go with this knife and I’m so happy with it. You can’t imagine how sharp that thing is until you try it. The only flaw of that, is that you will have to change all your other knife because you will just hate how badly they cut. I tried german knife as well, and they are very good, but they just can’t compare with this Shun knife. The only little thing I could enjoy from a knife of this price is a protector. You know just a little basic thing to protect your blade when you store it in your kitchen drawer. Shipping was fast as well. In the end, I’m cutting pretty much everything with my chef knife. I really enjoy cutting in everything like it was butter. Best knife I used so far.
