Q: What do you need to do if your installing more than one in terms of devices connecting and disconnecting?

In this scenario I'd recommend adding an Omada Controller into the mix, it will help load balance and move devices between access points depending on signal strength etc If you have a local server at home your can download and setup the software or buy the little standalone OC200 device. Excellent bit of kit and give's you a central point to manage all your access points.

Q: Do I just need to run one cat6 cable from this to my switch.as want to get relevant cables in place before I floor attic??

If you do not have a switch with Power over Ethernet (PoE) then you will need to have a mains socket nearby. So you just need power and cat5/6 cable.

Q: How can a 300mbps wireless interface have a 100mbps ethernet port on it? what happens to the missing 200mbps?

You'd be able (in theory) to get faster speeds between two devices connected wirelessly to the AP; but you would get maximum of 100Mbps to anything connected via the Ethernet port. So if you had two laptops connected to the AP, they would share the 300N connection. If you had network storage in another part of the house on the wired connection, you could pull data from it only at the Ethernet speed.
