Q: which size is best for Canon 5D Mark 2 ? (not to be too large or too small)

Depends more on the lens than the body. Fits a canon with vertical grip just fine. Used it with a 100-400mm zoom lens.

Q: How long/big is the velcro opening on the bottom?

The opening appears to be approximately 8 inches long. I use mine most often when kayaking, and it works great. Easy access to where you need to be. Folds up nicely and has held up nicely.

Q: Will this fit a 6d mark ii with a 24-70 zoom?

I think you shouldn't have any problems with that! It even covers my 5D M4 with 100-400mm, so 24-70 should be fine!

The CRC17 will cover up to 17 inches, so it should fit the 24-70gm lens just fine. You could likely use the CRC11 as well, which covers up to 11 inches, as the a7r3 is 8.3 inches long.
