Just received the seasoning today 12Dec24 and I saw that the expiry date is 1Jan 25!!! With just 2 weeks left to finish the whole 10ounce???!! I find it absurd! Very disappointed.

Not sure about this product. Shaking a moderate amount produces little change of taste... to use a lot, would be prohibitively expensive. Will keep experimenting.

KEEP IN MIND, that an "umami" blend isn't meant to add specific/notable pungent spice flavors. This isnt a spice blend per say, but a variety of spices that come together to help create an overall "umami" (Umami, being another one of the tastes our tongues recognize along with salt, sweet, bitter, and sour, it is generally described as having a “savory” or “meaty” quality). I think this does the job (and this is where nuance comes into play as there is more than one way to achieve umami ie soy, miso, kelp, mushroom, etc) Pleasant savory flavor, easy to use, versatile. I will often use more savory spices, or some soy, and/or mushroom powder to boost the savory umami flavor. Umami doesnt always have to be salty. It just needs to expand the tastebuds to pick up on a slightly meaty essence. Hence why mushrooms and soy are often used. But some products are way overloaded with sodium. This has its fair share at 100 mg per 1/4 tsp serving, but it isn't going to push my intake over the edge. Has a powder like consistency. Not at all granular. Think more like a mushroom powder. Has a nice easy taste that works well sprinkled ON foods (potatoes! eggs, egg noodles, etc), or doled out into a recipe (meatballs, meatloaf, burgers, veggie burgers, roasts, seitan, gravy, etc). I recommend using it as BASE of flavor, then working up from there with other spices. But by all means, give this a try alone too. I like it sprinkled into my sipping broths, where some need a little added oomph
