I have never used a hand turned wheel, only kick and electric. Is this easy to use and get a good rotation speed on?

This isn't for making pottery. It's used to decorate a pot or paint a pot on. You turn it as you paint or trim your pottery. It's like a turn table. You control the speed of it by turning in manually with your hand.

Hi. This item is not a traditional potter's wheel. It is made to turn by hand, usually for small sculpture pieces or for decorating pottery. It is also called a "banding" or "decorating" wheel since many potters use this to paint bands of color on their pottery pieces. You can however, make coiled pottery on this, but you still have to turn it by hand.

Will this hold a canvas for spin art? Like a 8x10 stretch canvas

I douby it. You’d have to attach the canvas to the metal top piece so it wont slip (how?). Then you’s have to spin it from the canvas as you wont be able to touch the metal. Keep looking.

I am looking for a wheel like this that will spin longer and faster. Is there any way to adjust the length of time and speed it spins?

This is a hand spin tool. If you a want longer and faster spin then look at an electric potter's wheel. I use this mostly for sculpting and sometimes for detailed glazing.
