This is my go-to Soy Sauce
First of all, this is a human review, and is absolute not AI generated!As a lover of great cuisine, and as a long-time foodie and restaurateur, this has been the only soy sauce I’ve used at home for the past 2 years now. My family and I eat ‘very clean’ (meaning organic, pasture-raised, locally-sourced, free of synthetic/dangerous chemicals and additives, etc), and this soy sauce perfectly fits the way we live and eat. Sometimes you have to sacrifice flavor to avoid those nasty things listed above - not so with this product! In fact, I don’t think you can match the flavor profile found in this traditionally-made product. The flavor is on-point, and knowing that we’re not putting anything but pure, good food in our bodies is so gratifying. This sauce is great for all Asian cuisine of course, but it also gives a huge umami hit when snuck (is that the way to say it?!) into other dishes as well. As of this review, unfortunately the price has seen about a 30% increase since the last time I purchased it, so we’re using it a little more judiciously, but still buying it nevertheless! Bang for your buck, I can’t recommend this product more highly.

GREAT Product w/ HORRIBLE Shipping
My review NUMBER is strictly for the product, which is excellent. It’s raw, unpasteurized and delicious in raw vegan sauces and dishes. It’s in a nice, glass jar, which is supior to toxic plastic I highly recommend it.The SHIPPING, however, is a nightmare. Amazon ships this WITHOUT any bubble wrap or protection. It’s a glass jar placed in a large box with a wad of paper. A kindergartner would know that’s not how to ship liquid-filled glass jars through the postal service. Be forewarned. These bottles frequently arrive broken with brown fluid leaking everywhere. It’s happened to me. No returns or replacements so you have to CALL Amazon, send a picture of the destroyed product, get a refund and then reorder it.It’s better for the environment, Amazon, if you’d package it properly and only need to ship it once.

The PACKAGING from this SELLER is TERRIBLE.
The quality of Nama Shoyu is unsurpassed. It is the only one I buy. EVER. UNFORTUNATELY this SELLER is irresponsible and packages this GLASS BOTTLE filled with LIQUID with minimal protection around in a box that it rolls freely around in during shipping. Arrived broken and leaking through the box. A MESS. Just know that there will be no meaningful refund. A LOSS to you the buyer.

Use a bottle spout
I have had good luck using spouts on smaller bottles and with those I never refilled beyond 3/4 way .Bottle is a little too full and air vent may not clear and dribble a bit. So as it is used and fluid level drops vent should clear fluid back into bottle. A tip... also do not clip stopper fully shut as air/fluid pressure if unequal may force a bit out of air vent. Its no big deal and still so much cleaner and not usually a issue. I bought several here to use with soy sauces and light liquids. Will post exact bottle stopper soon.Taste is delightful and as others have described slightly less salty ...perhaps a woody undertone from barrels is noticeable and a hidden sweetness in there too not noticeable or in category as a sweet soy by any means. Saltiness is not an issue for me so if using spout pour lightly and count your "glug glug" soy dispensing and after a few meals you will know how long to pour to suit your taste.....thats my measuring system. A trick to adjust down salt is add a sweet, I add in a bit of thai oyster sauce .

This is a delicious soy sauce
I love different soy sauces; the variety is like fine wine to me. But this one is my favorite, and I use it as my standard "go-to" soy sauce. The flavor is medium-density, with many notes of Unami flavors but nothing to distract from my sushi. It also adds such a great depth of flavor to everything from marinades to stews. The bottle is large, which I love, and I go through about 2-3 a year. I highly recommend you try it - it is great.

"Low-Sodium" is an Utter Lie
I hate false advertising!While the flavor is fantastic, the sodium content is WAY too high. I was so very disappointed when I tasted this and thought, wow, very salty!This sauce is billed as "Low-Sodium." But there's a very misleading trick in their list of ingredients: Every other brand of soy-type sauce lists ingredients based on one Tablespoon. This brand is based on one Teaspoon:"Each serving (1 tsp) of Ohsawa Nama Shoyu contains:5 calories322 milligrams of sodium"322 mg of sodium isn't too bad, if it were a Tablespoon. But one Tablespoon equals three Teaspoons. So, the equivalent amount is 966 mg of sodium!!! That's the complete opposite of low sodium! The average amount of sodium in these types of sauces tend to run from 600mg to 800mg (the non-low-sodium versions). I've yet to see ANY such sauce approaching 966mg/Tbsp.Upshot: these folks are liars. And for those of us that are working hard to keep our intake of sodium low for health reasons, this is utterly unconscionable, unethical and just plain unkind. Shame on you!

Best value in a Japanese soy sauce that I've found
This is an excellent everyday Japanese-style soy sauce. There are certainly better sauces out there for special applications (hence the four stars) - but they're much more expensive. When it comes to value-for money, I don't know of another product that even comes close to this product. Very much recommend.
