GF corn bread!
We did try this without the can of corn added and have half the package left so will try with corn next time. Flavor and texture are good. Would buy again.

This is not a cassava only blend. There are other gluten free flours in this mix. So it is OK rather than great. You can blend flours cheaper yourself and have a better recipe.

An Absolutely Wonderful Product
My husband and I have, for health reasons, decided to go Gluten Free. I am been testing products for at least 8 months and find Moon Rabbit to be absolutely spot on for texture, taste and appearance. I make their oatmeal cookies, muffins and cornbread on a regular basis. I do some home baking from scratch but buying all those flours to make a perfect blend for baking is very costly so Moon Rabbit is not only a wonderful product but a cost effective one. I have recommended this product to many of my Gluten Free friends and they also are very happy with the product. Thank you Moon Rabbit for making my life very easy.

Make the BEST hushpuppies (recipe on their website). ALL Moon Rabbit mixes are fantastic, biscuits are to die for (best drop biscuit gf or not), done all the way thru, freeze well (wrapped in wax paper then bag, thawed & 1 min in toaster oven) make the most excellent breakfast sandwiches, pie crust is like REAL piecrust, oatmeal cookies are fantastic (done all the way thru, stay great for days stored in glass)... Believe me, I have tried every recipe, every mix and the ones Moon Rabbit offers are the best and least expensive IF directions are followed EXACTLY!!

REALLY POOR DIRECTIONS!
Really expensive product with REALLY BAD directions! If they expect you to use only a portion of the package that should be CLEARLY marked!

Great cornbread mix
Great cornbread mix. It was simple to make and easy to cook. I didn't make it with added corn or cheese as the mix states as optional, and as a result it comes out as a drier texture of bread. But we like it this way. Definitely recommend, you can't tell it's gluten free at all.
