I have seen similar with what looks like a door/window on BOTH long sides. Does this item have openings on only one long side or both?

This item has a door on one long slide. There are two little window/vents on each of the short sides.

Can I purchase just the tent I ahve a cot.

Nope, and you wouldn't want to.The cot is made to attach to the tent with zippers. The tent itself has no floor - the cot is the floor.For much less money you could buy just a tent. And there are no cots that can be attached to this tent without extensive alterations.

Does this tent cot have a rainfly?

Yes a rainfly does come with it. It's not as heavy duty as the rainfly you get for the Original tent cot.

How stable is it? Does the ground have to be really level?

I've slept in mine many times. It is very stable. Of course the ground has to be level. There are 3 points of contact and if the ground isn't level or maybe evenly slopped you won't have a stable set up.
