Q: Total length of the 60mm valve with the cap fitted?

The measurements are from the base to the top of the stem where the valve goes in so I'm guessing it's probably about 70mm or just under with the cap? Sorry for not being more precise.

Q: What length of valve would I need for 32mm deep gravel wheels? Thanks.

You could probably use a a 44-46mm but you would probably just have enough valve showing to attach a pump? You would definitely have enough with a 60mm valve!

Q: Has anyone used with a hunt wheel set? specifically gravel race's?

I've got a set on a Scribe carbon gravel wheelset with Tubolight inserts and they are the best conventional Tubeless valves I have used! Been running tubeless wheels on mtb and Gravel bikes for over 10 years and these are the best I have personally used in that time. There are some new tubeless specific valves just starting to appear that promise to resolve the problems of conventional valves ie greater flow for seating and no clog valves. 76 Projects no clog valves are one to mention but of the conventional style valves the Peaty one's are the best.
