First Time
Arrived June 10.I’m expanding my cooking range by purchasing more umami ingredients, and this miso was a great addition. I was worried by some of the reviews, but the package arrived in perfect condition, slightly swollen, which I actually took as a good sign. It means the miso is alive and fermented, not the shelf-stable canned type I was specifically avoiding on the advice of an Asian friend. This miso works wonders. I use it in stews made in my 6.5 qt Ninja Foodi, and just 1 to 2 tablespoons added after pressure cooking transforms the flavor. Remember, that's AFTER pressure cooking. Here's how I do it. Ladle a bit of hot broth into a mug, stir in the miso with a fork until smooth, then return it to the pot and stir well and let simmer or sit for another 5-10 minutes so the flavor permeates your soup or stew. It adds a deep, savory backbone that takes the dish to a whole new level.

Great flavor and so easy to make at home
Love miso soup and was looking forward to making it at home to enjoy more regularly. Flavor is great, and it's so simple to make a few cups. I tore the plastic bag 3/4 of the way so I always have instructions handy and like the included plastic lid to pop back on and stick it in the fridge. So glad I finally bought it, and when I start to run low I'll definitely be ordering more!

Great Product
I love it. It is difficult not to like anything from Japan. They take pride in their product/work. They came well-packaged. No leaking, as I've read in some reviews. The expiration date of 11/25/25 will probably get a non Asian all bent over with disappointment. Fermented food just about lasts forever, refrigerated or not. My grandmother used to salt meat and hang them in hooks attached to the rafters of her house. They had fermented taste when cooked None of us got sick from eating them. My grandparents lived over 100 years old. When my mother bought them a refrigerator so they could refrigerate their meat "so it won't spoil/ferment" my grandmother used the refrigerator as a cabinet for her crocheted items. The meat continued to hang in the rafters. The "germ theory" is another long story. Note it is a "theory".

Product is Good; Lid of Container is Not!
This was my first purchase of such item. I took out a wok that I had not used in a while and the product worked well. My reason for only 4 stars is the flimsy lid. I put the entire container into a small freezer bag and placed it into the refrigerator. If the lid was better made, the freezer bag would not have been necessary. For that reason I will not likely purchasing this product again.

Incredibly delish
So much more nuanced and complex than I expected. Price is comparatively inexpensive for the quality. Highly recommend.
