Best of the bunch
Bought a couple bean cookbooks to try to inspire myself to cook with more beans. I've had The Better Bean Cookbook for years and LOVE the soup section and have made almost every single one, also the tagine recipe is my favorite ever. But the rest of the recipes were with ingredients like pheasant and monkfish, and generally just more expensive than my budget allows. So I needed a recipe book with a more budget friendly, weeknight busy family cooking style. Out of the four books I ordered this one fit the bill perfectly. While I wish it had a picture of every recipe, the pictures are nice, and the recipes look good, not overly complicated or expensive, and my six random/picky kid eaters will probably eat most of them just fine (how can a kid eat blood sausage at his abuela's with relish but turn his nose up at shrimp scampi??) Anyway, the other books I bought were The Mighty Bean (WAY too few pictures because let's be honest, I only make what LOOKS good on the page), plus just the recipes themselves seemed blah. There was only one that I really thought I'd like to try. That's sad. The other book was DK The Bean Cookbook, this was very much a vegetarian cookbook. I am not vegetarian. Every time I pass a black Angus herd while driving, I think of how delicious they will be. So way too many recipes trying to replace meat--faux hamburgers or what have you. Plus just a bunch of random recipes that aren't a main course that I'd never bother to make, and the main dishes are complicated, time consuming recipes. I will admit, a lot of the breakfast recipes looked delicious. And it did have the best bean descriptions at the front ie this kind good for salads, sub this for that, etc. as befitting a DK book. I have one more book coming, I'll have to update this then. On a side note, I also checked out Mediterranean Instant Pot by America's Test Kitchen and that was my favorite by far.

Love this cookbook - simple and yummy recipes!
I’m not a vegetarian and don’t typically incorporate a lot of beans into my cooking, but love this cookbook because it has a variety of approachable recipes (someVegetarian and some not, although easy enough to substitute out meat in the recipes that do have that as an ingredient if you wanted). In particular we loved the edamame slaw and I’m looking forward to trying even more of the recipes to mix things up a bit and eat healthier.

A Mixed Review
A brief treatment on beans and legumes. The positive aspect: 42 interesting looking recipes. Some creative ideas. The negative aspect: No index in the kindle edition. No charts of bean-cooking times, only a short ”encyclopedia” of beans. This book may work for you if you have the hardcover with an index. I'm returning mine—not enough here in the kindle version, at least.

You need this in your life
Have made a few of the recipes in the book and they were huge hits with my family. Great flavors and incredibly easy instructions to follow. She also does a great job breaking down how to cook with dried beans or if you need a quick shortcut canned beans. Highly highly recommend!
