Sourdoughs are quite forgiving that way. In this heat, they ferment super fast. Keeping them in a water bath works fine

What's the difference between the whole wheat and SF starters in taste?

You would use the SF to make breads with refined flour or maida, whereas you would use Whole wheat to make with multigrain or whole wheat flour
