Q: Is the noise cancelling always on, or can you switch it off?

There is no noise cancellation. These are open-back headphones, the very opposite of what you’re looking for. You can hear everything outside the headphones, and others nearby can hear whatever you’re listening to.

Q: Will these work with sony phones like XZ premuim

This headphone comes with a 6.3 mm to 3.5 mm adaptor and the XZ premium has a 3.5m input so it will work.

Q: Can I remove the cable currently in the headset? I don't want to try to remove it incase I cause damage.

Yes. Push the connector up the twist to the left then pull down. It can be stiff but shouldn't take to much pressure to remove. I had it come out when I got up and forgot I had them on

Q: Only left earphone works, any way to fix it please?

Try cleaning the end of the jack plug to ensure a better connection and ensure that the jack plug is pushed fully home. If that doesn't work you may have a faulty unit but I am no expert.
