Great Beginner Sushi Knife !!!!
Because of the pandemic, I chose not to go out for sushi so I got a 10 inch Mercer Yanagi Sashimi Knife about six months ago to explore, and get my sushi fix at home.This knife is easy to sharpen, maintains its edge relatively well and does a pretty good job filleting fish or cutting sashimi. This is a single bevel, single edge knife, meaning that if you are right handed, the left side of the blade is sharp (cutting side) and the right side is flat. If you're left handed, the opposite applies. The length is adequate and perfect for the space in most home kitchens. It is also light and easy to control.No, the back is not concave and it does not have the Uraoshi line. IMHO the price is perfect for a starter knife that should be able to take a lot of beating. There are better options if you go up in price, but this is a sensible starting point.Yes, I've taken the red pill :)

Excellent for the price - came very sharp as well
So I needed something better than my cheap Amazon purchased Fibrox knife that everyone raves about on Amazon. Came across these knives from a Youtube channel and I have to say - I am impressed at the quality of the blade as well as how sharp the knife came when it arrived. Razor sharp out of the box. It has made fish cutting pleasant where I can get some really nice and smooth slices of fish.I'm definitely looking into getting some of their other knives now. The quality is great and the steel is great as well.

Great For Sushi/Sashimi
As someone who is getting into fish slicing for sashimi and sushi as a hobby (surprisingly meditative, and you get to eat when done!), this knife is great for the price!Mine came straight with no chipping or warping. It wasn't as sharp out of the box (did a paper cutting test and there was a drag in the pulling of the blade). A quick hone fixed it.Still new to fish cutting (and I'm no chef) in the sense of proper sizing and setting up for presentation but the cuts are definitely cleaner with this knife compared to the standard long-blade knife I was previously using.

Who needs a $150 knife, give this one a chance. Its sharp, seems to stay sharp, handles well. Very long.

Perfect for fish.
Mercer has been my go to for decades. After my last knife went missing I freaked because I didn't want to replace it with poor quality. Mercer didn't disappoint me. The asian collection is still amazing. Quality is the result of practice, patience and dedication Mercer is true to its standards.

Great for sushi
This knife has been great. I have had troubles in the past with my knife dulling out very quickly. This one took a while to become dull enough that it didn't easily slice the sushi. But after sharpening it was good as new. It is perfect in length and thickness that it just glides through whatever I am cutting. I wish I had it sooner as I enjoy making my own meals.

Better Value Available
I purchased this knife along with 2 other (Hollory and Gourmetop) sashimi knives to "test drive". The decision to return this knife was an easy one when comparing it to the others. The lack of a urasuki, the out-of-the-box sharpness, the cheap feel of the handle, and the cheap packaging all made the other two knives a much better value. Especially considering this knife is more expensive. I have another Mercer knife that I enjoy using, but I will say, that it doesn't hold an edge as well as other knives in my collection.

Great budget sushi knife.
I frequently portion fillets and slice salmon and tuna with this knife for sushi and sashimi. Holds a decent edge. If slicing a good amount of fish you would probably need to sharpen at least after every 2 lbs. Maybe more often. Good handle. The size and shape are great. Be careful grabbing the handle. The back edge of the blade is very sharp and angle towards the handle. It is easy to poke your finger with it. The knife cleans easily. Good value for the price compared to other sushi knives. I got this as a beginner knife and liked it enough to order another.
