To the nose, the spirit is slightly salty, and at the same time somewhat citrus. In the mouth, the capers are very present, coating the palate with a rich savouriness, which lingers delicately.

Product Description An exciting spirit for cocktail lovers, Umami, named after our fifth "basic taste", is made by firstly infusing hand picked Italian capers in a neutral wheat spirit, then distilling at low temperature under vacuum. The resulting distillate is very powerfully perfumed with capers. It is then assembled with infusions of three umami-rich ingredients, and let out in the same neutral wheat spirit. Being un-chillfiltered means the caper flavour is richly intense
