Q: How many pieces will this hold?

We have an 8 piece set in ours. I can probably hold up to 12 easily.

Q: Do these latch or lock tightly for travel? Are these really dishwasher safe?

They are great trays! They latch but not too tightly. If traveling I would recommend additional closure like an elastic around it. But for use in the cabinet they latch just fine. I never tried using them in the dishwasher but washed them in the sink and they washed beatifully. Have a safe trip!
