This is a beautiful baker.
I am a new, but serious, bread baker. I make good/sometimes great focaccia and hearth breads & just started sandwich loaves. This baker is perfect for my new experiments. The first attempt stuck to the bottom badly because I did not prep the pan correctly. Today I oiled the top & bottom, used a duster ball to apply even layer of flour, and used parchment which I cut to size. I made King Arthur’s Harvest Grains Bread. The oven spring pushed up the top of the baker! Took top off for last 5 minutes. Tonight I have a beautiful, delicious sandwich loaf with perfect crust and the Emile Henry baker contributed greatly to the results. And the baker is so beautiful that I keep it on my stove or counter. Well worth the money if you regularly bake bread.

Does the job
This backing dish for bread has been great ! Good even bake for sourdough bread, I just parchment paper! No Complaints. I wish they sold the lids separately !

Wonderful new baking tool
I'd read some excellent reviews of this baker on King Arthur Flour website and Amazon so I took a chance, despite some naysayers concerned about lack of handles on the lower half. I've been using it for three months now and have made more than 10 loaves of various kinds of whole grain bread, and it is wonderful. I do follow the instructions to lightly spray the interior of top and bottom with veg. oil, then dust with flour before putting in the dough. Even when I didn't do that a few times at the beginning, the bread came out of the ceramic baker, albeit with some encouragement. When you oil/dust flour, the bread falls out easily.The quality of the bread depends on how you prepare the dough of course--I'm using a mixer to knead the bread, and that tends to result in a decent rise, even with 100% whole grain breads. The baker is easily cleaned after baking. The only precautions needed are those discussed in the brochure and are common sense--with the cardinal rule being don't allow water to come in contact with the baker when its very hot after removing from the oven. The holes at the top allow moisture to escape but also create a good environment for browning loaves without having to remove the cover.

Beautiful
I have a Dutch oven and two other loaf pans, ceramic and cast iron covered in enamel and nothing delivers as well as this loaf pan. So worth every penny. Selling my other pans and getting another few of these. Front loaf in this beautiful pan.

Great Baker.
I''m giving this five stars because it arrived on time and in perfect condition. There were only two recipes included, the first of which I tried. The results were less than desired and the loaf could have been used as a lethal weapon. I turned to King Arthur flour and was given a couple of suggestions. That said, I am on a mission to find a workable whole wheat bread recipe I can use in this baker. Other reviewers were unhappy with the holes in the bottom. The dough does ooze a little bit into the holes but isn't a problem. KAF suggested using a bit of parchment paper for no-knead bread recipes. Once I find that recipe, I know this baker will be used often. It's the perfect size and produces a great crust. It's the perfect addition to my kitchen.

Works Great for No Kneed Homemade Bread
I had been looking for a bread baker for my no kneed bread that wasn't round. I don't know why the no kneed is always round. Maybe because it all started in a pot? Anyway, I wanted the flavor and ease of my no kneed recipe in a shape that would work better for sandwiches, the whole way through. The concept of this baker was similar, in that I had been using a pottery type cooker. This had the shape I wanted and a lid. I used the recipe I always used, but let the bread do its second rise in the baker. It came out great! I am very happy this the results! I read other reviews complaining about how hard it was to remove from the oven. Prehaps they have changed the design, but it was very easy. There are small handles on both the lid and body of the baker.

Emile Henry Bread Loaf Baker
I received the item on time and early in the morning. I already had a dough ball rising. I went with a recipe I bake pretty often. Honey oat, 550g recipe. After the second rise I shaped and placed into the baker for the final rise before baking. I brushed the loaf with water and sprinkled with oats. Placed into my oven that had been pre heated to 450F baked for 35 minutes then a final 5 minutes with lid off. The bread came out nice but the bottom burnt. So I’ll need to experiment with time/ temp.

Absolutely worth it
I hesitated because of the price tag, but I would buy it again 100%. Sandwich loaves come out beautifully in this baker. Nice, soft crust, with great overall texture and color. The only complaint I have, like others, is that the bottom part of the baker doesn't have anything to grab onto. It's odd, because if you look closely at the listing photos (for the Charcoal and Linen colors) there appears to be eared handles on the base. In actuality, such handles aren't there. Nevertheless, it's not enough for me to give less than 5 stars. It's the performance that matters to me, even if I have to use some extra care in handling it. I use full-size silicone cooking mitts when removing from the oven and I haven't dropped it yet.

Like all Emile Henry products -works brilliantly.
Easy to clean and use- more basic information on the website to adapt bread baking process across to a ceramic baker would be useful- in English and NOT americanised for European users would be appreciated.Spare parts? Where can i source them- my lid broke on use 3

Excellent product, bakes perfect bread
I was given the Emil Henri bread mould as a Christmas present and I have used it twice, once to make plain bread and once for a loaf with pecan and cranberry, and the results in both cases are perfect. I baked the plain loaf alongside one baked in an ordinary loaf tin and The Emil Henri loaf came out softer and more moist but with a firm crust. This is obviously not a cheap item when compared to the cost of a loaf tin but the results are incomparably better. It is easy to use, easy to clean, no Issues when used as directed.
