How do you determine the correct width of wick? I don't have original, what I have (new) smokes and flickers.

You'll need to measure the wick throat of the lantern or lamp you are using. This is the metal piece that the wick exits from. Measure the width of that piece and you'll know the correct wick size to get. If the wick smokes and flickers, it might be that the wick hasn't soaked long enough in the oil to saturate the wick. Also, you might have too much wick exposed. Try soaking the wick for a good half-hour before lighting and then crank the wick back down till it stops smoking. Hope this helps.

I want to wick water from a open can reservour to some container potted plants. Do you think this flat wick will wick water?

I would try to email the manufacturer about that. I'd think so, but I've used it only with oil. It works fine in that application.

What is the coating they put on the clothe that interferes with burning the flame ?

No coating that I know of. The wick absorbs and transports the oil. As the oil burns at the tip it causes more oil to be pulled up the wick. The oil burns, not the cloth. The tip of the wick will slowly deteriorate and so you have to periodically advance the wick and eventually add more.
