What does the meat probe connect to? Will it shut the unit off if it reaches a certain temperature?

Yes, the thermostat is located in the bottom of unit. It works perfectly. This unit will cycle and maintain temps as low as 100°. I use mine to regularly to smoke homemade sausages and unit cycles at 150° consistently. I also use to hold temps of cooked food consistently. Highly recommend this analog smoker!

Can you get more racks to put in it?

It has a bunch of wholes inside to move racks around so if you could order more racks same size absolutely

Why can't I get the temperature higher than 250 to season it? Instructions say get it to 350 but won't go higher than 250.

I know on my smoker the temperature gauge is off by 50 degrees, it will go to 275 but I have used several digital temperature gauges and they say 325 when smoker reads 275, but that is as high as it will go. Don’t know if this helps but you should still be able to season smoker if you put it on high
