Yes. The interior is stainless. I don't know about induction as I don't use it, but I imagine it work as well as any metal pot will on induction. I use mine on a gas cooktop.

Q: can this be used as a slow cooker (crock pot) also?

Hi Michelle, This cooker can could be used as a normal stove top, pot, or crock pot (slow cooker) if it's lid is left off while cooking as this way the pot will not be pressurized. I must say I am extremely very happy with the Kuhn Rikon pressure cooker and would recommend it. Regards, Vince

Both are 8 Liter pots. The $379 pot is wider and shallower, and because the base is heavy, the larger footprint adds 3 pounds to the weight. The "braiser's" inside bottom is waffled to make it easier to turn meat; it is perfect for braising. The wider dimension also accommodates a larger inside pan, even a 9-inch cheesecake pan. However, if you do not need to brown, but need extra height to toss in lots of veggies for stock or broth, or to stack crème brulee cups, the narrower pot might be better (but the largest possible inside pan would be only 7 inches in diameter).

I’m sorry I don’t have the 5 quart mine is the 8 quart. I love it and using it as I type this message. We have chickens so old hens end up in the freezer and need pressure cooked.
