Q: This says for select gas grills. does this work with charcoal grills?

yes, any grill that calls for the listed dimensions of 19-3/4 x 6-3/4... the Chargriller 2121 is what I have and it's a charcoal grill, not a gas one.. not sure why they have it listed as gas grills in the description.

Q: How should these be cleaned after each use? If a wire brush, should it be steel or brass?

Brass wire brush. Steel will scratch over time and rust will develop.
