Q: Can the wire be removed in order to connect existing wiring?

It could, as it had to be wired in the first place, but it would be easier to connect, or shorten the wire , in order to connect it , with your existing wire. But do use a proper water proof box, and connectors.

Q: Can you wire these for a manual override to switch on and off without the sensors or timers ie On or Off?

Hi, as these lights are just the light unit itself with no sensor built in the cable is exactly the same as any ordinary 3 core cable with a live, neutral and an earth. It can be wired into an existing out connection which may have to be in a waterproof junction box, or wired into an external sensor or whatever your set up is. I hope this helps.
