Cure it for atleast 3 days with booze of choice.. generally rum works best.. you have to dump the 1st batch or wlse it will be bitter... fill again and cure for 3 days.. then enjoy as you wish.. no need to pit in the fridge

It's totally legal as long as you don't bring it to USA in it's dry state. It has to cured, it has to be soaked in rum.
