Well....not really very hard, but not soft and slimy. Softer rather than harder. It could be a little harder, but it's very flavorful, very good. And it's the only decent looking and sounding kosher salami that I could find. It's a lot, though, about 12 pounds!For the money, I highly recommend that you try it. If you don't like it, it's not a huge investment.Good luck!
