Q: Will emerald zoysia grass tolerate 0 degrees in the winter plus snow?

Yes it will, I bought the seed and grew my own plugs, much cheaper and fun. You have to trim them as they grow. I planted mine in October and seems to be doing fine now, can't wait to see how it does this spring.

Q: Can i overseed zoysia over bermuda and expect to overtake? or do i have to kill the bermuda first?

I would just overseed, starting in bad areas first. You have to overseed at the right time of the year. I always have my soil tested first to see what it need before I do anything.

Q: What is the difference between emerald and zenith zoysia ?

From what I read, Emerald is a darker green and does best in the shade. Zenith is for full sun and is not as green. I treat my lawn with magnesium and iron. Several other organic items to kill weeds. I keep my lawn cut no lower the four inches, it seems a little high but it does much better, you can go shorter when the weather is cool. I get many comments about how green my lawn is
