No, our Expandex is not a resistant starch.

Q: how does this differ from tapioca flour? or tapioca starch?

I'm sorry, Chrissy, I don't know how it is "modified." It seemed to function the same as other tapioca starch/flours I have used. The description states that the flavor has been enhanced, but I don't use tapioca starch alone, so I wouldn't know. I do know that I did not have a gluten reaction. And as far as I can tell, "tapioca flour" and "tapioca starch" are the same thing, unlike any other plant. Hope this helps some.

Q: Can this be used to make no-cook pudding?

I haven't ever used it for pudding. Have only used it mixed with other gluten free flours to bake with.

Chrissy, The info I get from an Expandex blog site is that it is a proprietary product and nobody really know what the difference is. The biggest concern people are asking is does it have other chemicals in it. It is Non GMO, Gluten free, but the fear is that the Allowed FDA process may duplicate the effect of having gluten but chemicals may be the reason it is doing this. Hmmmm. Makes you think. But I do like it and a 1/4 cup of organic cheese with a healty sprinkle of dried onion flakes really gives it a wonderful flavor -it toasts really good also. This is not the answer you or for that matter myself is looking for but maybe someone else can crack this nut John - I use 1 cup better batter, 1 cup tapioca flour(starch) 1 cup Expandex - this is my basic bread make up of flour. then two eggs, tbsp agave, dash salt, 1/4 cup organic cheese, 1 cup water, organic onion flakes - dash of sage,dill and thyme two Tbsp of Coconut oil. (bread machine) Gluten free cycle- two hours and your done
