Very Impressed for First Vegan Cookbook
I recently ordered this book, never previously vegan, to help my 4 month old daughter who is nursing. She was diagnosed with severe infant reflux. The best cure was for me to nurse her, and go on an extreme dietary change, first eliminating all dairy. As a complete dairy lover, this has been extremely difficult. I LOVE cheese, ice-cream, etc. Otherwise, I normally eat a very healthy diet and regularly exercise, so am already in great shape. After ordering this book, I was SO grateful to see all the milk/cheese/butter substitutes I might have never known about. I have now tried several of the recipes, and have been surprised how good they were in comparison to non-vegan. Thus making my transition not nearly as painful as it started. This book has been quite an eye opener as to why many turn to a vegan diet, and I now have a greater appreciation for them. The book includes dietary related environmental information, some of which I have heard previously, but appreciate and would absolutely not criticize as the majority of that is easy to obtain facts that can help our world. I do believe these recipes are excellent for your body when added into an already healthy lifestyle or to jump-start a completely unhealthy lifestyle.

Fun to read, and with good recipes to boot
An interesting cookbook. A Vegan adventure. There are a lot of interesting features to the book. Part One emphasizes sustainability. She notes a number of ways that the way we eat affects the environment: greenhouse gases water supply and pollution, deforestation, biodiversity, and fish depletion. So, there are some major issues addressed, albeit briefly. On page 24, we read the author's tips for understanding what's in the food (e.g., cholesterol, sodium, good versus bad fats). Suggestions on buying local are provided, as are a listing of the "dirty dozen," fruits and vegetables that can become toxic if not grown organically. Some of the discussion is a bit simplistic, but the lessons are useful. There are many more such "lessons" in the early parts of the book and scattered throughout. A favorite of mine is her herb and spice "chart o' fun," in which she suggests best pairings of food with herbs/spices (e.g., tarragon with French cuisine) and best results (e.g., nutmeg is best when freshly grated). Then come recipes, divided into the following categories: breakfast, soups, salads, sauces and dressing, sides, dinners, desserts, and drinks. An example for breakfast? Tofu Mexicali scramble, featuring tofu, salsa, grapeseed oil, onion, peppers, salt, cumin, chili powder, refried beans, whole wheat tortillas, pepper, and cilantro. Yum! Soup? Black bean and tomato soup looks appetizing! Salad? Creamy potato salad, with baby red potatoes, vegan mayo, Dijon mustard, apple cider vinegar, salt and pepper, and sliced green onions. Simple to make. . . . Or Greek salad with Tzatziki sauce. A side dish? I like broccolini. She has a recipe featuring this veggie: sautéed broccolini with garlic-infused soy sauce. An entree that I find intriguing: Match vegan chicken Marsala. I like chicken Marsala with chicken. This is an interesting Vegan counterpoint. The book is written in a cheeky, breezy fashion. Some may not enjoy that, but most probably will. In the end, I find this a satisfying cookbook.

Skinny Bitch: Ultimate Everyday Cookbook
As a long time vegan chef I have lots and lots of cookbooks. I often end up developing my own recipes but I have to say, "This is hands-down my all time favorite cookbook!" The recipes are delicious, easy and they even work as written! The main changes I've made is substituting maple sugar for cane sugar (I don't eat cane sugar) and cutting down on the Earth Balance a smig and adding oil rather than Earth Balance in a couple of recipes. Other than that I've hardly changed a thing. I've made about 50% of the recipes at this point and I couldn't be happier. One more thing, the pictures are beautiful and inspiring -- I just love a book with pretty pictures ;-). Like I said above, I was really hesitant to buy this book because I have lots of cookbooks but now I'm buying it for all my friends! This is a MUST HAVE!

Too Complicated
There are quite a few good recipes in this book, but a lot of them require a lot of work and a lot of ingredients, which isn't my favorite way of cooking. I like simple foods. If you like more difficult recipes, maybe you'll like this.

Vegan Cookbook Award Winner
Vegan Cookbook Award WinnerWhether new to vegan cooking or an OLD trouper, like myself, the Skinny Bitch: Ultimate Everyday Cookbook is a MUST HAVE for every vegan library. The entire book is chock full of helpful hints, food-prep tips and great recipes. This is a Vegan Cookbook Award Winner by Chez Bettay, the Vegan Gourmet! The Book's Look and FeelThe pages are printed on heavy stock paper and the glossy photography is excellent. I prefer seeing photographs of what the food is suppose to look like before attempting the recipe. The RecipesIngredients are listed with preparation steps separate. The layout makes gathering the ingredients "quick and easy" and preparation steps make the execution of the recipe trouble free.BUY the Skinny Bitch: Ultimate Everyday Cookbook.

As a meat eater, FANTASTIC!
My husband and kids have been vegetarians for 20 years. I was totally bored with cooking and ready to throw in my apron! Then I found this book. I can't say enough good things about it. I have made several of the recipes and each one has been fantastic! The orange scones were amazing. I used gluten free flour for my husband, who has a gluten sensitivity. The Thai coconut soup was wonderful as was the strawberry cupcakes, the spinach and strawberry salad and the Lentil tacos!! Tonight I am making the Creamy Cauliflower soup and the chickpea patties. In the beginning, it took several trips to the health food store to get all the ingredients, but, once I had everything, the recipes were easy and quick to throw together. I highly recommend this book.

Consigliatissimo

Kim does it again! Fantastic book!
I was excited to buy this book because I already owned the original Skinny Bitch and I absolutely loved it. There were quite a few differences between the two books. There are actually pictures of the recipes, there are mini-articles about health breakthroughs, etc. It is not a waste of money to get both of them. This one is a little more mild, the way that the author presents the information is not as much "in your face" as the original. I am very pleased with this book. There are a lot of delicious recipes, and they seem to always turn out very well. I have already made 6 and they are all very tasty! You will not be disappointed, if you liked the first one, you will LOVE this one! If you didn't like the first one, you will LOVE this one!
