Q: How does this compare to Maison Potier hollaindaise?

I can’t tell you about a comparison between the two, but Maille has a lot of citric in it, which makes it not as good as I was hoping. I still have a bottle and next time I intend it to reduce it with something comparable to its ingredients.

Q: Refrigerator shelf life? This is not something I’ll use every day. How long will it last after opening if kept in refrigerator?

Regarding the Maille Hollandaise sauce: We only know that it is a tasty product and didn't last long enough to become a left over. I am sorry that I couldn't have been more helpful.

Q: What are the ingredients in this hollandaise sauce?

Eggs,butter, lemon juice, some kind of oil, milk or cream....something to hold it all together.............I like it because of the slightly tart taste thanks to the lemon.
