Sunsweet Lighter Bake is a SUPERB butter/oil replacement for some foods, such as oatmeal-raisin cookies so yummier than regular ones I'd make a double batch and give the second to neighborhood kids. Unfortunately, Lighter Bake is no longer available from stores in my area, likely because it didn't sell well enough: not a reflection of the product (which is great), but perhaps because too few people now bake from scratch -- a problem that will be solved once low-cost robotic chefs become ubiquitous. And they will.
