Q: Would this hold a loaf of bread?

It depends on the size of the loaf

Q: Once built, can the shelves move? Is it adjustable?

All the holes are pre-drilled and once you tighten them they ARE NOT adjustable. The shelves are offset in the back so it does take up more space. It looks like the back is flush but it is not. I think it is for easy access to the items in the 2 lower shelves. Hope this helps.

Q: Is the wood untreated.

It seems to have a clear coat, you can easily clean it or wipe it off with a cloth or wet rag
