Excellent quality
This knife is excellent. When I buy a knife, I do not care that it doesn't COME sharp, only that it can be MADE to be very sharp. This knife was both holds an edge fantastically, but as a bonus came razor sharp already. I am in charge of quality and metallurgy for a steel manufacturing plant that makes 2 million pieces a month, so metal is something I know.Pros:- The handle seems very durable, and I like the shape. It's a great knife if you've got a 7 year old learning to cook. (adult supervision only obviously)- The knife has a very nice weight for its size, and handles very well, whether I'm pairing with it or my daughter is slicing.- The angle of the grind is great, and cutting is almost effortless.- The steel the blade is made from, along with the heat treatment means that the blade will stay very sharp for along period of time.Cons:- It's biggest strength could also be a draw back. The steel this blade is made from is VERY hard and will keep an edge a long time. However, that also means that it is also hard to put that edge onto the knife. You need several levels of whetstone and a lot of practice with them to sharpen this kind of knife. Otherwise, you can probably find a place near you that will sharpen them for only a small fee.Bonus tips:- NEVER put your knives in the dishwasher. The high heat of the drying cycle can be hot enough to ruin the temper (heat treatment) on your blade and make it soft, keeping it from holding an edge. It also works like a sand blaster with gritty soap to help remove food that will dull your knife quickly. Hand wash, dry, and put away immediately after use.- Use a honing steel before each use. Honing steels do NOT sharpen knives, but they will help to realign the very small burrs on the edge helping it to retain a sharp edge longer. Use a high quality steel or ceramic one.I am confident this knife and the others I've bought will last me years.

Sharp knife
This knife arrived sharp and ready to use right out of the box. It looks nice and feels good in the hand thanks to its handle and weight. This was what I expected as a mid range kitchen knife and I expect it to last many years. The plastic sheath is a little loose but it stays on well enough.

The best knife I have and use every day.
This is the BEST parking knife ever! I use it daily and it never fails. Currently, I am seeking a new sheath as my husband ground my be up in the garbage disposal about an hour ago! Hope the company can help me replace. This kinda is great, do not hesitate to purchase. Worth ever cent. I just might buy another....but need to give thought to buying another as to my needs. But it is great and I recommend to all of you! Go for it, you will not regret.

Very comfortable knife
This is a great size for slicing tomatoes, skinning fruit, or cutting anything. The weight is nice and well balanced. It comes very sharp. After only a few uses, it was having a hard time cutting thru a tomato skin. I have been sharpening knives for years, so I put a sharper edge on it and it’s incredible now! Hardly any effort to cut delicate items.It comes in a very nice box with a snug plastic blade protecter. If you don’t want to store it in the box, but in your drawer, keep the blade protecter on it. It will keep the blade from being banged up and save your fingers.

Garbage
I thought I was getting a high quality knife after I went through several reviews and I always wanted a Dalstrong knife…. Amazon had a great price on it and I thought it was a great opportunity to feel out this manufacturer…… The knife feels really good in your hands and is very sharp right out of the box…. I never abused the knife and only used it on fruits and vegetables…. After about a week of daily use I noticed that the tip was curled……. I was surprised to say the least….. Luckily Amazon has an excellent return policy and they took it back and refunded my money…… ……. …… I am adding to this review and changing the rating to 4 stars because of Dalstrong’s excellent customer service….. They allowed me to choose a different pairing knife as a replacement and I have to say it is a much higher quality knife…. So if you’re on the fence at all about purchasing one of their knives you can feel confident in the fact that they will help you with any discrepancies you may have… Thank You Dalstrong for your Great Service.

Nothing better for cutting broccoli
I love broccoli and cauliflower and steam fresh almost every day. I have used a paring knife to cut the flowerettes until receiving this knife. It's the best for this particular job. I'm glad I found it. Have purchased more for gifts.

Super Cool, High Quality, well finished, rock solid knife!
Super Cool High Quality knife!First of all, I'm not a chef, but I do barbeque a lot and have had quite a few knives, but never a really good one. Looking for a good knife, first I bought a Victorionox Chef's knife because of the reviews, but I didn't like anything about it, seemed like your normal Walmart knife in spite of all the 5 star reviews. Finally after some more research I bought the Dalstrong and have had it for about 2 months now, here's what I love about it:-At first look, high quality, very solid costruction, well finished knife...definitely met my "cool knife" requirement.-I like the form, very comfortable for a pairing knife, I use it mostly for cutting fruit.-Very sharp, passes paper cutting test no problem. Of course remember to have your honing steel handy, since to keep it sharp you will have to hone it regularly, which is to be expected. I take very good care of it, but one day I came home and found my wife smashing it against the chopping board chopping onions, so, so far it is tough!-Solid handle, really nice finish, does not absorb water, the middle pin with the logo is the perfect finish, plus with the metal on the end you can use it to smash stuff if you want.-Comes with a nice sheath, which comes in handy for storage so nobody gets cut.-No matter how close you look at it, all the terminations and material are high quality.So, overall I'm very satisfied with the knife, I cannot find anything I do not like about this knife. My next purchase will be the utility knife, although I want to try out the Shogun series with Damascus steel!

Precision implement for fruit and veg prep
This paring knife is made from high quality polished steel and is super sharp. The construction is reassuring and the shape is ideal for small vegetables and fruits.Cleans very easily after use and has proven to be sharper than similar priced knives I have purchased in the past.The German Steel knives tend to be cheaper than the AUS-8 and AUS-10 steel versions but while those "Japanese" steel knives are normally higher on the Rockwell scale of hardness, I found them difficult to hone and more aggressive sharpeners eat away at the blade. I read that professional sharpening is recommended for such knives and the use of metal steels is not advised, with ceramic honing rods being preferable.All knives lose their sharpness with use. Tiny amounts of damage are caused every time they are used. As a diabetic, I was astonished to learn how much damage is caused to the metal of a hypodermic needle after just ONE injection into a person's body. Under a microscope you can see the damage caused and that is why the needles can only be used once, or they will damage the skin and tissue. Honing the blade realigns the edge whereas sharpening puts a new edge on the blade and fragments of the blade are lost in the process. I have over-sharpened knives in the past and they simply become blunt, often unable to even slice a tomato.My advice would be to hone the blade only as required and only for enough time to realign the blade. Most knives will probably be pretty sharp to start with but the question is how easy it is to maintain that sharpness long term. I have found this Bird's Beak Dalstrong knife to have been razor sharp out of the box and it feels like a quality product that will last a long time with adequate care. It certainly looks the part and is making short work of veg prep.I cannot understand those who have had problems and not done anything about it. In my experience Amazon themselves and Dalstrong are only too happy to help out. I had a small cosmetic issue with a Dalstrong produce knife and after contacting them regarding the matter they swiftly replaced the knife and all was well. In my experience Dalstrong Customer service have been quick to reply and very sincere and swift in resolving the matter in hand. I have confidence that if there is any problem, they will stand behind their promise and make sure you are issued a replacement or a refund.
