For this style of stamp which isn’t too detailed is memento black ink. Anything really detailed then versafine ink is best.

Q: has anyone had the backing sticky sheet peel off?

I have not had any problems with this product. However I have not used them a lot because they are so large and I make cards. Perhaps yours were deficient. Contact the company and they may replace them rather than disappoint a customer. Good luck!
