Bilberry (wild blueberry) is very different from the cultivated blueberry. Bilberry grows in wild forests, while the blueberry is cultivated. The wild blueberry is handpicked and grows ecologically. The wild blueberry contains anthocyanin at a level that is 3-5 times higher than that of the cultivated blueberry. Berries growing in Nordic countries are rich in nutrients compared to the cultivated varieties. Northern conditions are characterized by long days with much light and low temperatures during the growing season. Due to this, berries produce more polyphenols (antioxidants, which give the wild blueberry its characteristic color). Wild blueberries contain several times more flavonoids and 4 times as much anthocyanin than cultivated blueberries. The wild blueberry powder is made of the seeds and skins of berries after they have been pressed for juice. First, we extract juice from blueberries, after that, we use the remaining solid mass for making berry powder. Wild blueberry pomace powder contains valuable part of the berries: peels and seeds, which are dried at low temperature (50-55°C) to preserve all the nutrients. This dried mixture is then ground into high-fiber wild blueberry powder.
