Super knife sharpener my best ever sharpener to date.
I just purchased this last week and sharpened all my knives with it.12 different knives to be precise and I did a before and after test on each knife on soft slightly over tiled cherry tomatoes. The before effect on every knife was the tomato indented before the blade would cut in.After the blade cut in it struggled to cut through the skin on the bottom of the cut leaving a squished tomato with Jude and seeds over the chopping board. So I ran each knife through the first slit closest to the handle 5 times and you could feel wash draw gained a more grinding result each time and you could see the shards of metal falling from the back of the sharpener. After this I pulled the knife through the second stage furthest away from the handle which appears to be white stone 5 times and tried a new over rpied tomato. Now I have had many sharpener before and I am not a sales person for this company but I can honestly tell you that each knife slid through the tomato slicing the skin with zero pressure and cut right through to the board.I cut the tomato with 5 different types of knife in half and in half again and yes in half again effortlessly.I don't normally post in-depth reviews but on my life this little sharpener is the plumbs.I purchased this set of knives from a charity shop for 5 pounds and every knife squished the tomato but after 5 strokes each side running through this sharpener the knives were like new.Look at my pictures I am over the moon with this.Good luck and MIND YOUR FINGERS.

A comparison with stones and 1 stage systems
Ease: The main selling point of this product is the ease of use. It takes like a minute to finish sharpening (just pull it through a few times) and it doesn't require much skill. In comparison when I used stones, I spent like an hour on a knife. I know some people can do it in like 20 minutes, but as a beginner I needed that time as I was learning. With this device you hardly have to know anything.Sharpness: Nothing is going to get you a knife as sharp as what you would get with a few stones, and around 20 minutes of hard work + some skill. However that's hard and the stones cost more. Personally as a beginner, I got better results with this product. Knifes sharpened with this product do feel razor sharp. I could cut through paper, but I did have to use sawing motion. For most kitchens this should be more than good enough.1. stage systems: There are some one stage products out there. Basically they only include the carbide steel blade. The problem with that is the carbide steel blade takes of so much metal in one go, you can actually see the difference. If you always use that sharpener only, you will probably soon over sharpen. (eg the whole blade disappears) Besides, I can't see any reason why not just buy this product which includes the same tool plus some extra.I have not used any other 2 stage system to compare it to.

One of the best around for the price
I bought this to help me sharpen a bushcraft knife and a folding knife I own, as I wasn't getting the hang of using a wet-stone. The good thing about this knife sharpener is that is very easy to use....and it works well. The groove nearest the handle is for getting an edge on a knife (if it's fairly blunt to start with). Take it easy here, as over use will make your blade edge brittle. 4-5 strokes will do it. Then the 2nd groove (furthest from the handle) contains ceramic sharpeners, and this is how you will fine tune your blade to get a razor sharp edge. I just add a tiny bit of water to the groove for the best effect (rinse in warm soapy water and dry after). There are probably better sharpeners out there, but not at this price.

WOW - brilliant!
I have been desperately in need of sharpening my knives for such a long time, yet cringed at the sound and feel of most sharpeners (fingernails on blackboard moment for me). The sheer bluntness of my knives drove me to finally do some proper research and get on with ordering the right tool for the job. I carefully read the reviews on all the top sharpeners, finally deciding to go with the Harcas Premium Knife Sharpener. As soon as the package arrived I was keen to not only see if it was up to the job, but also see if I was capable of doing it without turning into a wuss and start gagging! WOW WOW WOW - I wholeheartedly fell in love with the ease & efficiency of the tool - to the extent that I did all my knives in one go, without turning into quivering reck (& then repeated it, having read the instructions properly and saw that water will make them even sharper). It's easy to hold, doesn't slip and doesn't make me cringe at the sound and feel when using it. My super sharp knives have brought back a whole new level of pleasure when it comes to food preparation! Just wish I have discovered this tool years ago!

Easy and simple to use and store.
This unit is so very easy to use and keeps the correct angle on your blades for efficient cutting (as far as I know!). In just a few strokes of the blade, they are sharp and ready to go. Give them a quick wipe or wash before using to remove any sharpening dust, and you are ready to chop smoothly again.I was expecting a wheeled mechanism, as that is what our previous sharpener had (hubby broke it though, so I needed a replacement!), but this has crossed bars - I believe that one set is steel, the other ceramic, but don't quote me on that. Either way, you only need to pull the blade through 3-4 times in each slot to get a nicely sharpened knife ready to go. Which means it is very easy to keep your knives sharp (and a sharp knife is always safer than a blunt one, when handled correctly). The unit is not large for storage, and happily sits in the drawer under our knife block.Very pleased with my purchase.
