Q: How do you prepare it? Just let it defrost over time? Is there a certain amount of time it has to thaw?

I put it in the refrigerator for a day or two. I put about three packets in the fridge at a time to thaw them out, and then take them out as needed.

Q: What is the portioning for mini to large breed dogs?

They give basic guidelines for feeding when you view the product on-line based on weight but depending on your dog, breed, activity, age you may have to start with the recommendation based on the dogs weight and then weigh your dog about once a week to see if you need to decrease or increase portions.
