Q: I just want to know if the middle part is removable because it looks it will block my legs?

I think it's possible, But you will need to fix the legs properly, or you can fix the legs more further to the back side, I did the same without removing the back Since I have tall legs as well.

It didn't come with instructions.

Q: Is it easy to install?

Not Easy but doable you may need an extra hand and a drill Just make sure to take measurements correctly and mark places for drilling. Unfortunately I don't know the exact poiter sizes but I did it myself and the disk is really good.

Yes You can remove it.for me I installed it a little bit further to the back since I have long legs too. And all is so good even I use the back side for cable management using some cable organizer kit and valcro to remove chargers easly. And I have lowered it as well to move the cables freely from under the dest towards the rear side.
