Q: I notice after setting blade in clamp and flipping over 180 degrees, there is a 5to7 degree difference. Is it supposed to be?

There are some good YouTube fixes out there, but no, there shouldn’t be and variation.

Q: What angle range does this sharpener support for sharpening?

You determine the angle. I have knives with angles from 11.5, 12, 15, 17, 20, 22 and I have sharpened them all. Once you have determined your angle, check it often. It’s a nice idea that could benefit from improvement, but if you get a digital protractor and check angles often you will get good results.

Q: Would it work for a small pocket knife (blades from 1.5"-2.5")? It looks like the clamp is larger than that so I dont know how it would clamp blade?

I've sharpened a blade one inch in length with no issues. If the blade can be clamped in, it will sharpen.
