Q: How is this different from the old version?

Q: What is the +|- button for?

The +/- is to cycle through the preset temperatures. Also, after you selected the desired temperature, if you hold down the +/- for 3 seconds it will keep that temperature for 2 hours then automatically shut off. This does not apply for boiling button. In my opinion ,it is useless because the kettle heats the water extremely fast. Again, my opinion. Hope this helps.

Q: What is the difference between this model and newer model?

I don't know. What I do know is that I love my kettle. I can set the temp I want and it's ready so fast I hardly believe it. My tea made at the correct temp has made all the difference in the world. I don't know about the newer ones. I just know I love the one I have.
