Q: Do both sides have zippers?

No they do not have zippers on both sides, but the opening is wide enough to reach inside.

Q: Do these work against small flying insect in the home while dishes are drying? I want to put my dish rack inside of this.

These are HUGE. A large dish rack will fit. The holes are very small, a house fly could not get in, it depends on how small the insect is though. But I don't think any would try.

Q: What would you call the size of the mesh?

I don't have the item to measure, but the item lists all the dimensions of the mesh on Amazon's website. They're each fairly large capacity.
