Gesso preps your project for other mediums once it is dry. So you will be able to apply paints and other inks. As far as water for cleanup yes it does clean with water before it dries on the brush.

Not quite sure what a Bible art journal is. I use this as a base for my canvas before I paint. Depending on how thick your journal paper is, it could possibly curl your paper as it dries.
