So Happy I Found These
I tend to cook a lot of Jamaican food, but I live in the USA (Oregon, to be specific), and we do NOT have scotch bonnet available around here. Usually I end up using habanero, which is about the same Scoville rating as scotch bonnet, but lacks that underlying sweetness of scotch bonnet.Dried anything is never really comparable to fresh anything, but these are pretty exceptional. I re-hydrated a couple of the peppers and made some jerk chicken. It was pretty fantastic. The flavour of the scotch bonnet really came out, and now I'm looking forward to using these peppers in more meals.I've also used some of the dried peppers (not re-hydrated) in quinoa, and they're still really good.For what it's worth, I feel the sweetness comes out better when you re-hydrate the peppers (boil some water, then pour the water over peppers in bowl and let them soak for about 10 to 15 minutes).If you can't get fresh scotch bonnet, this is the next best thing. Now that I know where to get these, I'll probably never use habanero as a substitute again.

These are good peppers
I've recently started making my own hot sauces and had a friend request a scotch bonnet sauce for Christmas. That's how I learned that it's not possible to find fresh scotch bonnet peppers in Chicago (or anywhere online that ships to North America) between October and February. Oops. I ended up ordering these dry peppers. They were a reasonable price, they arrived quickly, and they were easy to rehydrate and made for a tasty hot sauce. I'll buy these again if I ever find myself unable to procure scotch bonnet peppers in December.

Authentic peppers but wish they included more in the package
These are real Scotch Bonnets, which are darned near impossible to find in my area. I used most of these over the summer in a couple of batches of homemade jerk sauce. My only gripe is that I wish there were more peppers in the package. If you do a lot cooking, you'll run through these quickly.

The heat with a good amount of flavor.
I re-hydrated a couple of these for my Trini Chicken Roti. I hadn't used these before and had use Indian Red Chilies dried. These have a nice heat and add a nice flavor. More heat than flavor though. In all I like these.

As good as fresh peppers
Though these peppers are dried, they are as close to fresh as you can get. The aroma of the Scotch Bonnet peppers hits you as soon as you open the bag, if not before. They easily crumble into dishes and they are hot!!! Now I can make Jamaican patties again. Wholeheartedly recommend them, and I've already ordered my second bag.
