Q: Would this be good to teach the digestive system?

yes. intestines are nice rubbery texture as well. My boy loved it but the intestines will eventually come apart with continued use. Small parts.

Q: Does this model come unassembled? If so, is there a booklet explaining how to put it together? Thanks!

Hello. It is partially I assembled and does come with a small photo book that guides on the instruction for assembly. This has not been opened, however my toddler and I have assembled others in the set, some easy and some a bit more complexed. The head model was slightly challenging, yet fun. I hope this helps.

Q: Does this set show the appendix?

No, the large intestine are all molded into a u shape surrounded by flesh looking material so it will snap behind the small intestine. The appendix isn't present on the end of the large intestine that I can see.
