- Baijiu is the national spirit of China, and thus the most popular spirits category in the world. Although, rarely accessible outside of Asia
- Baijiu (pronounced bye-j-yo) means “white alcohol” in Mandarin Chinese, which is exactly what it is. Much like we “spirits” in English.
- Ming River used sorghum grain fermented with wild yeast for two to three months in earthen pits. The pits were created in 1573, with many of the pits being at least a century old.
- The mash is batch distilled in a traditional Chinese pot-still and rested for at least two to three years. Our female master blender, Zeng-Na then balances the complex flavours to perfection.
