tasty cookies.
Turned out pretty good. I made a half batch using peanut butter. In the directions, I wish they would indicate what the cookie mix measurement is for doing a half batch. I dumped it all in a big measuring cup and then eye-balled half of it and put the rest back in the container. I used a food processor, and they were pretty simple to throw together.The cookies weren't overly sweet, which is good. I hate it when low carb cookies are filled to the brim with sugar alcohols and other fake sweeteners, when things are too sweet you don't taste any of the actual flavors. This cookie mix is much healthier and better tasting imo than others I've tried.I was happy with the final texture, especially after they cooled in the fridge for a while. Can't wait to try it with other nut butters too. The flavor had a touch of something I couldn't put my finger on, maybe cinnamon? or cloves? It wasn't overpowering, and I like those flavor profiles regardless.

Will do in a pinch
On a low carb diet, and we LOVE the Diabetic Cinnamon donuts, so decided to try the Nut Butter Cookie Mix. I made up just half the recipe - which came out to use 1 1/2 c. of the mix. Used Mint chocolate peanut spread. Be sure to leave lots of space between the cookies, as they spread out. I mistakenly put too close together and had "brownie brittle" as they all went together. We choose to put a thin layer of mint frosting for more flavor. Texture for us will take awhile to get used to.

Yuck
I don't know why this product had good ratings. First of all the price was alright until you added 4 cups of expensive nuts to make the nut butter. Even then it would have been worth it as I expecting a nice shortbread low sugaring tasting cookie. What I got was something that tasted so horrendous I threw away the rest of the dough. It tasted like a high concentrate of sugar substitute that is so strong it made it sickly sweet with the terrible after taste. You can try it but in my opinion it was not even edible.

Not Moms, but not bad.
Not bad for what they are, though there is a bit of a chemically taste even after they sat a day.I was going to give it three stars, but I was very impressed by the email the owners sent me regarding tips on how to make sure I got the most from this product.Despite their warning, I did have to try one fresh from the oven...bad call, I should've listened. Mushy, kinda greasy and not very tasty. Put them on a plate with a paper towel over them as suggested....and not to bad. I've been on Atkins for a little over a month now, and although these aren't Moms home made, they are a nice treat. I'll be moving them into the fridge as suggested tomorrow.One suggestion to the sellers. As a single guy, or for those trying to go low carb in a house full of people that aren't, It might not be a bad idea to throw measurements in for 1/4 batch, or even a half batch. I know the instruction told me to dump it all into a measuring cup and then pour back half. But it won't all fit into a 2 cup measuring cup. So I had to use two of them. It would be easier if there were measurement I could use to simplify.

Makes delicious low carb cookies!
I made these cookies using Trader Joe's Raw Almond Butter. They are absolutely delicious and so easy to make! I have tried a few other low carb cookie mixes and they were ok but not good enough to purchase them again. I even brought a dozen to my family on Christmas and they thought they were fantastic too and asked why I brought so few as they gobbled them all up having no idea they were low carb! I didn't tell them because I wanted the rest. :-) It is hard to find a tasty low carb cookie mix but folks, this is it. I even received an email from Diabetic Kitchen which recommended how to store them since they are different than your normal homemade cookies. Their suggestions were spot on and I now have the rest in the freezer. And, they are really yummy right from the freezer too! I plan to try making them again with pistachio butter.

Not worth the hassle
The cookies taste pretty good but they were not easy to make. There are several reasons for the 2-star rating. One is that a mix is supposed to be time-saving and convenient. This was not. It was annoying to have to make my own nut butter before I could get the batter going. There was plenty of Smart Balance peanut butter in my pantry, but instructions said use only pure, raw nut butter. How many people make nut butter every day? How does one know how many nuts to put in the food processor to end up with a cup of nut butter? Had to guess and of course I made too much...OK, the nut butter was made and measured. I was only wanting to make a half batch. So...how much dry mix should I use? Instructions say no problem, just "halve" the contents of the can. OK, Diabetic Kitchen--you're not even going to tell me what that is?? So I then had to get a bowl and measure out the entire contents of the stupid can into it, then calculate the amount. (By the way folks, it's 1 3/4 cups. You're welcome.) Then I had to return the rest of the mix back into the stupid can. By this time I'm getting ideas in my head on how I could have (and should have, and will next time) easily made my own gluten free, Stevia in the Raw sweetened nut cookies with my Smart Balance peanut butter already in my pantry! For a lot less money, too.So now the food processor had mixed everything and it was finally time to bake. "This cookie dough is sticky," it says on the can. This is an understatement, as this dough was more like molasses in January, (in OH) and in all honesty, the most difficult dough I've ever had to work with. Too bad I just happened to be one of the few people on earth who does not have a cookie scoop in her kitchen! (SMN). This meant I had to invent magic moves to get the dough apportioned with some semblance of consistency for each cookie. This did not actually happen and I ended up with uneven sizes. Who cares, right? Right!Like I said in the beginning, the cookies taste good. We've been eating them up. But they aren't good enough to make me use this mix again. I can make better cookies from scratch in half the time, with a lot less aggravation and use what's in my own pantry, thank you.
